Granola Bars
Ingredients:
- 3 cups rolled oats
- 3/4 cup natural peanut butter
- ⅓ cup honey or maple syrup
- 1/2 tsp vanilla
- ½ cup mini chocolate chips
- 2 whole eggs
- pinch of salt (leave out if peanut butter is salted)
Optional extras: walnuts, pecans, almonds, chia, sunflower/pumpkin seeds, or dried fruit
Directions:
- Preheat oven to 180c.
- In a large bowl, combine all ingredients and mix well.
*If your peanut butter is solid at room temperature, heat it for 10-15 seconds to make it a more drizzly consistency before adding to the mix
- Line a 9x9 baking dish or pan with parchment paper.
- Transfer the mixture to the prepared dish or pan
- Firmly press the mixture into the pan in an even layer.
- Bake for 15-17 minutes or until the center is baked through and the edges are just starting to brown.
- Start checking at 14 minutes, as all ovens are different.
- Remove from the oven and place pan on a cooling rack.
- Let the bars cool completely before cutting
Smoothies
Ingredients:
- 200ml coconut water (check for no added nasties like sugar)
- 1 cup frozen berries (I use raspberries)
- Handful spinach
- 1 tablespoon Greek yoghurt
Directions:
Optional extras: I like to throw in flaxseeds, chia seeds or hemp seeds for added nutrients and protein - doesn’t affect taste
Can add a little maple or honey for sweetness, frozen mango also works well for this
Giant Cookie
I like to use sourdough discard in my cookies as it adds some probiotics but any cookie recipe will work if you mix, the.ln fry lightly then put into the oven.
Ingredients:
- 115 grams unsalted butter browned
- 140 grams brown sugar (dark or light)
- 100 grams sourdough discard
- 1 large egg yolk
- 1 tsp vanilla extract
- 175 grams all purpose flour
- 1/2 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 175 grams chocolate chunks
Directions:
- Brown the Butter: Heat the butter in a small to medium-sized pan on the stove over medium heat. Swirl the butter around and stir every minute. The butter will bubble up and fairly quickly, and you will notice a nutty smell and see little brown flecks appearing on the bottom of the pan when you stir the butter. Immediately remove the pan from the stove (the butter can burn quickly if left for too long on the stove).
- Pour the brown butter along with all the little brown bits on the bottom of the pan into a medium sized bowl and let sit for a few minutes to cool. Add the sugar and stir.
- Mix Wet Ingredients: Mix together with the sourdough discard to combine completely. Mix in the egg yolk and vanilla extract until smooth and combined.
- Mix Dough: To a small bowl, add the flour, bicarbonate of soda, baking powder and salt. Pour the flour mixture into the butter mixture and mix together until just combined. Add chocolate chips and stir into the dough until evenly dispersed.
- Add to a small frying pan and heat for a few mins until the bottom starts to cook
- Add the frying pan into hot oven and bake for 15 mins
- Leave to cool in the pan before flipping over the cookie onto a plate
- Slice like a pizza
